Coravin: l’amico delle bottiglie / Coravin: an interesting bond with the bottles

Penso sia giunto il momento, dopo decine di spillate, di dire la nostra su un dispositivo sicuramente conosciuto dagli amanti del vino e che definirei “geniale”: il Coravin.
Dobbiamo tornare indietro a qualche anno fa quando, se ben ricordo, fu un regalo di Natale “condiviso”… Una bizzarra formula per rinunciare reciprocamente a farci un regalo per prenderne uno insieme e più azzeccato per entrambi. Certo, la spesa non è proprio irrilevante, ma i vantaggi di questo sistema ripagano ampiamente la cifra investita ed anzi fanno riprendere il valore spillata dopo spillata, limitando gli sprechi. Non sai di cosa si tratta? Il web è pieno di video e tutorial per ottimizzare l’utilizzo e spiegarne al meglio il funzionamento, ad ogni modo forniremo una brevissima descrizione. In pratica, un sottile ago fora il tappo in sughero e – grazie all’utilizzo del gas argon – riesce a spillare del vino evitando che entri ossigeno nella bottiglia grazie  all’azione protettiva dell’argon, essendo un gas inerte e più pesante dell’aria. Il tappo inoltre si ricompatta in pochi secondi, grazie all’elasticità del sughero e puoi capovolgere la bottiglia senza che esca una goccia dal tappo, considerato anche lo spessore irrisorio dell’ago.
Tornando a noi, cosa abbiamo notato nel bene e nel male in questi anni di utilizzo?
L’unica cosa se vogliamo dire “negativa” che abbiamo notato è che non si tratta di un dispositivo per tutti… Non che sia in grado di apprezzarlo solamente chi ha fatto il Master Sommelier – ci mancherebbe – ma dovrebbero a nostro avviso sussistere determinate condizioni per giustificarne l’acquisto: passione sfrenata per la materia, cantina ben rifornita, presenza di bottiglie almeno di valore medio (inutile spillare il vino del discount o comunque una bottiglia da 4 euro per intenderci…) ed occasioni per poterne usufruire altrimenti tendi a dimenticarlo. In quest’ultimo caso, penso che la situazione ideale sia di bere spesso in coppia (o soli ovviamente), in quanto in 3 o 4 persone una bottiglia si consuma in poco tempo.
Quali sono dunque le occasioni per usarlo? Ecco una breve lista che riflette la nostra personale e concreta esperienza in merito:

  • Abbinamento ideale: a volte ci è capitato di avere per cena un antipasto leggero ed un secondo pesante, dunque aprire una bottiglia adatta sarebbe stata un’impresa impossibile. Con il Coravin si è risolto il problema, spillando un bianco e successivamente un rosso strutturato senza aprire per niente 2 bottiglie.
  • Bottiglie importanti: purtroppo stiamo invecchiando e non siamo proprio più capaci di gustarci una bottiglia intera di un rosso importante come ai bei tempi, considerato che in genere c’è sempre da bere qualcosa prima… Dunque, più che mai nel caso di bottiglie non proprio economiche, l’utilizzo del Coravin permette di bere dalla stessa bottiglia più volte, con tutto il piacere che ne deriva.
  • Perfetta conservazione: abbiamo spillato alcune bottiglie (come ad esempio un Taurasi Radici di Mastroberardino) dopo più di un anno ed il vino non aveva subito alcuna alterazione, lo stesso dicasi per un Sassicaia. Solo in un caso su decine il vino è “andato”, probabilmente a causa di un errore in fase di spillatura.
  • Gioco didattico: fin da subito, ci siamo divertiti uscendo a turno dalla cucina, lasciando all’altro la facoltà di spillare un vino fra un’ampia scelta disponibile. Il gioco poi di degustare a turno alla cieca è un’esperienza didattica a mio avviso molto valida.
  • Confronti fra vini: molto interessante è stato ad esempio confrontare vini della stessa tipologia, senza per forza aprire completamente 2 o 3 bottiglie! In questo caso dunque appare chiaro come il Coravin permetta di fare cose che altrimenti costerebbero un patrimonio. Mi ricordo ancora adesso le differenza fra un Abtei Muri ed un Taber, due interpretazioni di Lagrein che abbiamo potuto valutare spillando un paio di bicchieri per bottiglia. O una comparazione fra 3 Chardonnay di zone diverse.
  • Partner capriccioso: alcune volte non si riesce proprio ad andare d’accordo, oltre al fatto che Erica è sempre più restia ai vini rossi strutturati (preferendo eleganti Pinot Noir o qualche orangewine), mentre il sottoscritto se mangia gulash di cervo non disdegna un bel Montepulciano o vini del genere. In questo modo, finisce la questione e si depone l’ascia di guerra.

Ovviamente il Coravin si presta benissimo per essere impiegato in qualche ristorante o wine-bar, i vantaggi per questi locali penso siano sotto gli occhi di tutti.
Insomma, di buone ragioni per acquistarlo – con le dovute premesse – ce ne sono parecchie e per noi è stato un acquisto azzeccatissimo, per cui se vi siete in parte identificati in alcuni dei casi soprariportati, probabilmente sarebbe il caso di farci un pensierino.

Specifichiamo ovviamente che non siamo venditori né abbiamo alcuna collaborazione in essere con l’azienda oggetto delle nostre lodi. Semplicemente, ci fa piacere rilevare come un dispositivo simile ci abbia pienamente soddisfatto!

I think the time has come, after dozens of taps, to give our opinion about a device certainly known by all the wine lovers and which I would call “brilliant”: the Coravin.
We have to go back to a few years ago when, if I remember correctly, it was a “shared” Christmas gift … A bizarre formula to give up mutually giving us a gift in order to take one together and more suited for both. Of course, the price is not exactly cheap, but the advantages of this system amply repay the amount invested sip after sip, limiting waste. Don’t you know what is it? The web is full of videos and tutorials in order to optimize use, explaining how it works, however we will provide a short description. Basically, a thin sharp needle pierces the cork and – thanks to the use of argon – allows to take out some wine from the bottle, preventing oxygen from passing in, due to the protective action of argon, being an inert gas and heavier than air. The cork also close the perforation in few seconds, thanks to its elasticity and you can turn the bottle upside down without a drop coming out from it, also considering the negligible thickness of the needle.
Returning to us, what have we noticed for better or for worse during these years of use?
The only downside we have noticed is that it isn’t a device for everyone … We don’t mean that only those who have done the Master Sommelier can appreciate it – that would be the last straw – but in our opinion there are supposed to be certain conditions to justify the purchase: wild passion for wine, well-stocked cellar, presence of bottles of at least medium value (it would be useless to tap a wine from a convenience store or in any case a 4 euro bottle to be clear…) and opportunities to be able to use it otherwise you’d risk to forget it . In the latter case, I think the ideal situation is if you drink with your partner (or of course alone), since in 3 or 4 people you can open the bottle and you do not need to use the Coravin.
So what are the opportunities to use it? Here is a short list that reflects our personal and practical experience:

  • Ideal match: sometimes we happened to have a light starter and then an heavy main course for dinner, so opening a suitable bottle would have been an impossible task. With Coravin the problem was solved by tapping a white and then a structured red without opening 2 bottles at all.
  • Important bottles: unfortunately we are getting older and we are no longer able to enjoy a whole bottle of an heavy red as in the good old days, considering that in general there is always something else to drink before … So, more than ever in the case of not really cheap bottles, the use of Coravin allows you to drink from the same bottle several times, with all the pleasure that comes from it.
  • Perfect preservation: we tapped some bottles (such as a Taurasi Radici di Mastroberardino) after more than a year and the wine had not undergone any alteration, the same applies to a Sassicaia. Only in one case out of dozens the wine is “gone”, probably due to our error in the tapping phase.
  • Educational game: from the beginning we had fun going out of the kitchen in turn, leaving the other the ability to tap a wine from a wide selection available. The game of blind tasting in turn is an amazing and a learning experience in my opinion.
  • Comparisons between wines: it was extremely interesting for example, to compare wines of the same type, without necessarily opening completely 2 or 3 bottles! In this case, therefore, it is clear how Coravin allows you to do things that would otherwise cost a fortune. I still remember the difference between an Abtei Muri and a Taber, two interpretations of Lagrein that we were able to evaluate by tapping a couple of glasses per bottle. Or a comparison between 3 Chardonnay from different areas. Terrific!
  • Capricious partner: sometimes you just can’t get along, in addition to the fact that Erica is increasingly reluctant to structured red wines (preferring an elegant Pinot Noir or some orange wines), while if the undersigned eats deer goulash, he doesn’t mind a delicious Montepulciano or similar wines. In this way, the matter ends and the hatchet is buried.

Obviously the Coravin lends itself very well to being used in some restaurant or wine bar, the advantages for these places I think are for all to see.
In short, there are several good reasons to buy it – with due preconditions – and for us it was a good purchase, so if you have partially identified yourself in some of the cases mentioned above, it would probably be the case to think about it.
We obviously specify that we are not sellers nor do we have any existing collaboration with the company that is the object of our praise. Simply, we are pleased to note that such a device has fully satisfied us!

Passionate about wine since childhood, when with my teeth I punctured the plastic cap of my Dad’s mini liquor bottles or when I got drunk by Franciscan Monks after church.
