Champagne 2.0

Abbiamo già parlato del ristorante Grani di Pepe di Flaibano, un piccolo paesino a circa 30 km da Udine; un locale molto carino per una cena e per eventualmente passare la notte in una delle loro camere. Lo amiamo molto, sicuramente per come si mangia, ma soprattutto perché questa vecchia casa di paese è stata completamente ristrutturata con cura maniacale, specialmente all’interno in cui si può trovare un mix estroverso di antico e moderno che ha il potere di farti “sentire a casa”. Comunque c’è un’altra ragione importante: la carta dei vini è speciale, poiché il titolare è un vero esperto di vini francesi e molto spesso si reca personalmente in Francia a visitare piccoli produttori, selezionando così ottimi vini a prezzi molto competitivi.
Uno di questi è stato il protagonista di una serata di degustazione e non potevamo perderci la serata!
Il Domaine André Tixier è una piccola cantina situata in Chigny-les-Roses, un villaggio Premier Cru vicino a Reims, nell’area conosciuta anche come “Montagnes de Reims”. Dal 2012 questa azienda familiare è guidata da Julien, un ragazzo ancora giovane ma con le idee molto chiare in testa. Abbiamo apprezzato molto il suo stile, molto diverso da altre piccole cantine della zona, in quanto lo Champagne che ne esce ha uno stile più lineare e pulito, uno Champagne 2.0!

Abbiamo degustato 4 etichette diverse, qui sotto una breve descrizione:

  • CARTE PERLE (60% pinot meunier, 20% pinot noir, 20% chardonnay) : subito profumi minerali, poi frutti a bacca rossa ed esotici, poi pan brioche e cipria. In bocca è sapido con una buona acidità. Questo “entry level” è gessoso e ricorda lo stile di qualche famoso produttore della zona di Reims.
  • CUVÈE CHARDONNAY (100% chardonnay): questo blanc de blancs al naso è un po’ speziato, cremoso con sentori di zenzero ed un leggermente fumé. Stesse sensazioni in bocca, per un elegante blanc de blancs.
  • CUVÈE MILLESIME 2012 (50% chardonnay, 35% pinot noir, 15% pinot meunier): questo millesimato riposa nei lieviti per 5 anni e può definirsi più “old style”, con sentori di frutta a bacca rossa e mela cotta.
  • LES CHEMINS D’AMIS (100% pinot meunier) : questo vino, malgrado la sua grande complessità, è ancora piacevole e per niente pesante. Non ha aromi di mela cotta, piuttosto di succosa mela verde, ananas ed un interminabile finale in bocca che vira ad un netto richiamo di liquirizia. Nel complesso un ottimo Champagne da 100% pinot meunier, missione compiuta!

Concludendo, questi 4 vini in degustazione ci sono piaciuti tantissimo e se passate da quelle parti consigliamo caldamente una visita, dovrete trovare molto spazio in macchina per il ritorno…

We already wrote about Grani di Pepe restaurant in Flaibano (30km far from Udine), a charming place to go and eventually spend the night in their nice hotel in this post.
We love it of course because we appreciate the food, but also because this old house has been renovated with a great attention to detail, especially inside and there is a crazy mixture of ancient and modern that make you feel comfortable like at home.

Anyway there is another important reason: the wine list is something special, because the owner is a true expert of French wines and he often go personally in France visiting small producers and selecting the best wines with good value for money.
One of them was invited last October 12th and obviously we couldn’t miss the event!
Domaine André Tixier is a small winery located in Chigny-les-Roses, a premier Cru town close to Reims and located in the Champagne area “Montagne de Reims”. Since 2012 this family-run winery is lead by Julien, a young man but with clear ideas. We appreciated a lot his new style in making the wine, so different than other traditional small wineries and that leads to a more “clean” and linear style, of course an up-to-date champagne.
We tasted 4 different labels and each was really interesting! Here below a short description:

– CARTE PERLE (60% Pinot Meunier – 20% Pinot Noir – 20% Chardonnay)
Scent of minerality, red and some exotic fruit, then hints of pastry and face powder. In the mouth is salty with fresh acidity. This “entry level” is chalky and remembered us the style of some famous producers from Reims area

– CUVEE CHARDONNAY (100% Chardonnay)
This blanc de blancs is a bit spicy, creamy with ginger scents and a bit smoky on the nose. At the end an elegant blanc de blancs, another good Champagne!

– CUVEE MILLESIME 2012 (50% Chardonnay – 35% Pinot Noir – 15% Pinot Meunier)
This wine rests 5 years on yeasts and is characterized by a more typical “old style”, with hints of red fruits and baked apple.

– LES CHEMINS D’AMIS (100% Pinot Meunier)
This wine despite its great complexity, is pleasant and not “heavy”. It doesn’t have aromas of baked apple, in contrast we smelt almost a green juicy apple, pineapple with a neverending finish on the mouth that turns to balsamic and licorice flavors. Overall a great Champagne created with 100% of Pinot Meunier and this grape variety has been enhanced, mission accomplished!

At the end, their Champagne are so good that we drank more than one glass-per-wine and we can just recommend a visit in Chigny-les-Roses for a tasting! I think you should go with an empty car…
